Pumpkin Oat Cookies

Here’s the deal…  I eat the same ingredients everyday for breakfast.  Once in a while I will alternate in a slice of ezekial or some whey powder, but for the most part 98% of the time I eat the same ingredients, oats, egg whites, and chia seeds.  So as you can see I have found all sorts of different ways to cook them!  Last night I really wanted something coarse and muffin like for my next days breakfast so I experimented with these cookie/muffin like things!  I hope ya’ll enjoy them!  they’re so quick and easy too!


1/4c oats

2tbsp pure pumpkin

3tbsp egg whites

1tbsp chia seeds

stevia, and cinnamon to taste

sprinkle of pumpkin pie spice

1/2tsp of baking powder

I mixed them all up in a bowl. Should be thick!  If you want them a bit more moist you can add another tbsp of pumpkin but I like them kinda dry ish…  Anyway then separate them out into whatever size you want.  I made 3.  Then I took 3 tiny bite sized dried prunes and stuck them in the middle.  Sprinkled another dash of cinnamon and stuck them in the oven on a cookie sheet. I baked them on 375 for about 10-12 min and voila!!  Let them cool for a few minutes because they will fall apart.
